There is no need to add water. Cook till the squid is well cook and all the water that came out of the squid is used up.

3 sprigs - Curry leaves

Coconut oil or Corn oil

Method

2 ) Heat oil in a pan. Add green chili, coconut bits, curry leaves and fry for a minute. Then add shallots and fry till light brown in color. Add garlic - ginger paste and fry for a minute.

3 ) Add the cooked squid, stir and mix well. Stir and fry for 2 to 3 minutes. Take off the stove and serve.

Tip

If the squid is too spicy, add half a cup of thick coconut milk to it and cook till the gravy is thick and coating the squid.

Small squids taste better than big ones and of course fresh is best.

Hello! I discovered your blog while looking for a recipe for spicy squid. I couldn't follow yours exactly because I didn't have all the spices at home, but you explain all the instructions so clearly and easily that I risked an incomplete version. My husband wants to try the real one another day :)

You have an excellent blog, will susbcribe and try more recipes, this time hopefully with all the correct spices!

Nia : glad to read your comment :) Do try this recipe and others too.

I am keying in this comment after a meal of this wonderful preparation. It came out perfectly as I followed the recipe to a T. I added just one step. I lightly roasted the marinating spice mix to eliminate any potential raw taste. Your instruction specifying cooking the squid covered on a low flame until the water evaporates helps, since I know one has to either cook squid for a very short time (couple of minutes) or for over half an hour to render it soft. Thank you!
