A post that hit a century with a homemade cookie !

It's simply delightful to look back on the recipes i blogged and feel nostalgic. I was awe struck seeing very impressive food blogs before i started on my own. Over this period of eight to nine months, i have been able to make and meet some wonderful friends through the blog world. I appreciate all those who visit my blog, try out my recipes and sometimes give me a feed back that keeps me motivated to continue. I was so thrilled when two of my recipes were tried by Pecos Blue of East of the Pecos River fame and posted a post titled "Simply Spicy." Thank you Pecos Blue.
Now in Seattle, I got together with my good friend Lakshmi, who is by her own rights, a great cook. She told me about this simple homemade biscuits / cookies that is quite popular in her hometown. With minimal ingredients and less baking time, this cookie tastes simply awesome. It's something that you can do in a jiffy. This could be something you could bake with kids.


Ingredients

1 cup - Maida / all purpose flour
1/2 cup - Sugar
1/2 cup - Melted ghee ( at room temperature)

Method

1 ) Add maida, sugar and melted ghee into a mixing bowl.



2 ) Combine the ingredients to make a dough.

3 ) Take a small amount of the cookie dough, shape it to a small ball and then flatten it. Then shape with a cookie cutter or you can shape the cookie even with a glass as shown in the pictures below.















4 ) Transfer the shaped cookie dough to a baking tray. Preheat the oven to 350 degrees F and bake the cookies for 15 minutes. The bottom of the cookies will be lightly golden in colour.

Transfer the cookies from baking tray to a wire rack and cool.


Treat yourself and your kids with this delicious cookie.


Note : Use only melted desi ghee for this recipe. Do not melt butter and use.

If your sprinkle some sugar on top, it an be called as snowball cokkies too :) I have made similar ones...LOVED the idea of maiking crescent shapes with glass tumblers....:)

Oh okay.... so then, that will be a variation to this simple cookie. Also to make it more attractive, coloured sugar could be used.The cookie has the right amout of sweetness...anything extra will be for those who like it a notch sweeter.

Hey this cookies does taste so much like nankhatai....but then this must be the basic recipe. I have noticed some other added ingredients like caradamom or nuts to nankhatai.

HI Pravs,

Thank you for this easy recipe with only 3 ingredients, I tried it and it came out very good, they tasted just like buscuits we used to get from Bakeries in hyderbad. They used have salty version also which includes kala jeera and salt if u can post that recipe too that would be great, the photos were very good.

It's Madhu again. I did try these cookies, it did come out well, but I guess not as good as yours. I think I made them very thin, so it had a reddish color, instead of half white like yours. The taste was good though. I'll be trying it once again.

Hii,
I had bookmarked this recipe a few months ago, but totally forgot to try!! Today, half an hour back, I stumbled into this again and on a whim decided to bake it. It is just out of oven now.
5 things why I will make this recipe again;
1. This is super tasty
2. It is simple, just 3 ingredients!!!
3. It can be made on a whim.
4. This recipe is a keeper, if you have friends, who calls and say " Hii, we just came out for an evening walk, will visit ur home in 5 minutes". Usually these calls panics me and makes me raid the pantry which will be unsurprisingly empty :)-
5. There is very less washing involved. 2 measuring cup and one mixing bowl!!!!
What more can you ask for baking!
I have also tried ur meen peera and loved it.
When I visited your lovely blog last time it was a "Warm welcome from philadelphia" and now it is "welcome from Mt. Holly". Guess it is the Mt. Holly in NJ and in that case it is a warm welcome from Maple Shade ;)-

Hi Pravs, as mentioned in my previous comment I did try these cookies back in March and they came out good. So I wanted to bake these again and I made these today only to see that the dough became very watery. Today I measured 1/2 cup ghee using the liquid measuring mug, which is little more than 1/2 cup which we use to meausre dry ingredients. So I add another 1/4 cup of all purpose flour to the dough and baked them as usual ang got wonderful cookies.

My question is, the 1/2 cup of ghee you have mentioned should it be measured using the dry ingredients measuring cup. I totally forgot how I did it earlier. But either way we were satisfied with the end result. The cookies were so soft and tasted exactly like those we get in Indian bakeries.

madhuram : Its simple ! just use one measuring cup to measure dry and wet ingredients. If ever it's a bit watery.. do as you did.. add a little more flour. Thanks for trying :)

Did u use no baking powder ?then how it can be cookies baked without baking powder ?
