Aloo Matar Tikki, Fruit Chaat

Chaats are popular street food in india, especially in the northern regions. These are savoury snacks that are lip smacking and filling. Aloo matar tikki, a potato- green peas pattie, that is served with fruits and garnished with onion, coriander leaves, spice powders and drizzled with curds, is a very filling and delightful snack. With the tartness and sweetness of the fruits and the savoury taste of aloo matar tikki, it's a combination of taste in your mouth. Ingredients

For Tikki

3 big - Potato, boiled with skin
1/2 cup - Green peas, boiled
2 - Green chili, finely chopped
1/2 '' piece - Ginger, finely chopped
1/2 cup - Coriander leaves, chopped
1/2 tsp - Turmeric powder
1/2 tsp - Garam masala powder
Salt to taste

To coat

4 tbsp - Bengal gram flour

To Garnish

1 cup - Mixed fruits, diced
1 - Onion, chopped
1 cup - Thick curds, beat with a little sugar
1/2 tsp - Roasted cumin powder
1/2 tsp - Red chili powder
Few sprigs coriander leaves

Method

1 ) To make tikki - Mash potato, while still warm very well. There should not be any lumps. Then crush peas with hand lightly and add to the potato and mix. Add green chili, ginger, coriander leave, turmeric powder, garam masala powder and salt to taste. Mix well, then take a little of the mixture, make a ball of it, then flatten to make a pattie / cutlet /tikki shape.

2 ) Heat oil in a pan. Spread some bengal gram flour on a plate, roll the tikki, in bengal gram flour and deep fry or shallow fry until golden brown in color. Make tikki's in the same manner with rest of the mixture.

3 ) Now to garnish and serve the tikki with fruits - Place two tikki's in a serving plate along with some diced fruits. Add some beaten curds around the plate. Sprinkle roasted jeera powder and chili powder. Garnish with chopped onion and coriander leaves.

Fruit suggestion - Pomegranates, grapes, apple and like. Cut fresh fruits when ready to serve.

Bhel Puri & Inspiration Award

Bhel puri is a mixture of different savory ingredients, put together and then tart tamarind date chutney, green cilantro-mint chutney is drizzled on this mixture and served fresh. I have used ready to use haldiram's bhelpuri pack to make this snack, rather than buying all the ingredients separately. In addition to the ingredients in the packet, other fresh ingredients are put in.

Ingredients


One 200 gram packet - Haldiram's bhel puri
1/2 cup - Beaten rice

1/2 cup - Besan boondi / Masala boondi
1/2 cup -
Aloo bhujia
1/2 cup - Red onion, chopped small

1 medium size - Tomato, chopped small
1/2 of a - Cucumber, chopped small

1 big - Potato, boiled and cubed

1/2 cup - Coriander leaves, chopped
1 to 2 tsp -
Chaat masala powder
1/4 tsp -
Garam masala powder
1 tsp - Lemon juice
Salt to taste


Chutney's

Tamarind date chutney

Green chutney


Method


1 ) Lightly roast beaten rice in a pan and let it cool. Into a big mixing bowl, add haldiram's bhel puri. The packet has a masala packet, out of which you can make chutney. And also a sev packet. Empty the sev into the bowl. Then add roasted beaten rice, boondi, aloo bhujia, onion, tomato, boiled potato, cucumber, coriander leaves and lemon juice.

2 ) Sprinkle chaat masala powder, garam masala, salt to taste, toss and mix all the ingredients together. Now when ready to serve, add tamarind chutney, green chutney, the chutney that came in the packet, as to one's taste.

Serve and have it fresh.

Aloo Tikki Choley Chaat

Aloo tikki is a very popular north Indian snack. These aloo tikki's are stuffed with channa dal in the center and shallow fried. You can put any veggie filling you like instead of channa.Now these tikki's can be served along with tamarind-date chutney, green chutney and yogurt. Then the next thing you can do is make chaat with Aloo tikki and serve along with choley.

Aloo Tikki - Stuffed with Channa dal

Ingredients

6 medium - Potatoes, boiled
2 tbsp - Bread crumbs
1/2 of a - Onion, finely chopped
2 - Green chili, finely chopped
2 tbsp - Coriander leaves, finely chopped
Salt to taste

Masala powders

1/2 tsp - Red chili powder
1/2 tsp - Coriander powder
1/2 tsp - Amchoor powder
1/2 tsp - Roasted jeera powder
1/2 tsp - Garam masala powder

For filling in center

1/3 cup - Channa dal
Salt to taste

Method

1 ) Soak channa dal for 1/2 hour and cook dal in enough water with salt to taste. Dal should not get over cooked. Cook till the dal is cooked and grainy, not mashed.

2 ) Boil potato with the skin. Discard the skin and mash potato finely. Add bread crumbs, mix and knead to make a smooth dough. Now add all the masala powders, salt to taste, onion, green chili and coriander leaves. Mix well.

3 ) Now take a small portion of potato dough, make a ball, then flatten it. To the center of the dough put little cooked chana dal and wrap it with potato dough, like it is done with stuffed paratha. Wrap the dough and then make like a ball and flatten little to get a pattie shape.

4 ) Heat a flat pan with little oil. Place the tikki in the oil and shallow fry on both sides to a golden brown color. Take off the pan and drain in a paper towel. Similarly make tikki's with rest of the potato dough.

Serve with Tamarind-date chutney, green chutney and yogurt. You can drizzle the chutneys and yogurt on the tikki and serve. I have not made green chutney for this picture. It was yummy even without green chutney.

To make Aloo Tikki Choley Chaat

You need to make choley to serve with aloo tikki. This is a simple choley preparation to go with aloo tikki.

For choley

Ingredients

29 0z / 822 grams can - White chick peas, drain water and wash well
1/2 of a - Red onion, chopped finely
1 - Tomato, chopped
1.5 tsp - Coriander powder
1/2 tsp - Red chili powder
1/4 tsp - Turmeric powder
1 tsp - Amchoor powder
1/2 tsp - Garam masala powder

Seasoning

1/4 tsp - Cumin seeds
1/4 tsp - Hing powder
2 - cloves
1 - Big black cardamom /Badi Elaichi
1 small - Cinnamon Stick
1 - Bay leaf

Method

1 ) Heat oil in a saucepan, add cumin, cloves, cardamom, cinnamon , bay leaf and hing powder. Let the spices give out the aroma. Then add onion and fry till golden brown.

2 ) Add coriander, red chili, turmeric, garam masala and Amchoor powder. Fry for a second. Add tomato and cook on low heat till tomato is well cooked and oil separates. Add cooked channa, little water and bring to a boil. Smash little channa, simmer, add salt to taste and cook till all the water is used up and is dry. Take off the stove.

Now that the Channa is made, to make the chaat.

1/4 cup - Beaten yogurt
1/4 cup - Tamarind-date chutney
1/4 cup - Green chutney
1 tbsp - Red onion, chopped ( instead of onion, white radish julienne can be used)
Little ginger julienne and coriander leaves

In a serving plate, place tikki, little choley then drizzle with yogurt and chutneys. Sprinkle onion, ginger and coriander leaves. Serve this yummy Aloo tikki choley chaat as a evening snack.
