Tea Cake - To Rejoice a Year of Blogging !

Blogging has been so addictive for the past year and can't believe, it's been a year of blogging. Always there has been a passion in me to try new / traditional recipes and serve it to my dear and near ones, eagerly wait for their reactions. Now sharing what i cook through blogging, i eagerly wait for the same reactions. So I thank each and every visitor, who come by every time i post a recipe and encourage me with positive words. Also to those very readers who try my recipes and give me a feed back, i can't thank them enough.
Rejoicing a year of blogging with a tea cake, which is moist, soft and yummy. This cake brings back memories of childhood, when mom baked cake at home in a bundt Cake pan. I have used a 8'' spring form cake pan to bake this cake.

Ingredients

1 cup - All purpose flour
3/4 cup - Sugar
3/4 cup (1.5 stick ) - Unsalted butter, softened at room temp
2 - Eggs, at room temperature
3/4 tsp - Baking powder
1 tsp - Vanilla extract
4 tsp - Warm milk

Method

1 ) Preheat oven to 350°F (175°C). Generously butter pan and dust with flour, shake off excess flour.

2) In a bowl, sift together flour and baking powder, two times.

3 ) In a blender, cream butter until fluffy. Add sugar and continue to beat for 5 minutes. Add egg one at a time and beat well after each addition. Add vanilla extract and beat well.

4 ) Pour the creamed ingredients to the shifted flour in the bowl. Mix and whisk the flour and creamed ingredients. Add warm milk, mix and whisk in a clock wise direction, very well till you see air bubbles in the batter.

5 ) Pour the batter into the cake pan and level the batter. Bake for 25 minutes or until done. You can insert a wooden pick in the center of the cake to test if the cake is fully baked. Cool in pan for 30 minutes. Then invert cake onto cooling rack to cool completely.

Yeah the tea cake bring back found memories from childhood.
My mom used to make this cake in her cake oven. You know the ones with a class top.
I don't think it exsist anymore :-)

i made the cake and it came out well,only thing tht though i am a non vegetarian i could feel the taste of the egg which i dont like.so could you tell me what more can i add into the same recipe to reduce the predominant egg flavour.i felt the same problem when i made other simple teacakes.

Sumi : Thanks for trying and for the feedback. For reducing the egg taste/ flavor,use only egg white or increase the vanilla essence quantity.

I've trying to make this tea cake i discovered in India last year, but i already failed twice !!! Indeed, i'm french and we don't have the same metric system...Unfortunately the measures i found are never the same !!!So can you help me if you know grams???
I can't wait to taste this so marvellous cake !!!

stéphanie et jonathan : This is a very easy cake to make i should say. I am sorry to note you were not successful making it. Did you fail with this recipe ?
I find it hard to make a dish that is given in grams, so i have always used the standard ( US standards )measuring cups in my recipes.
1 cup equals - 8 oz
what i can suggest is use same cup to measure solids and liquids in.
I know i am not much of help, but i find it hard to measure and cook in grams.

Sumi : i am not sure, if substituting with egg whites for whole egg will be a good idea. Read here, why so.

Congrats on this ongoing expedition of tastes. I'm going to try this today.

I got a doubt. In the recipe you said to leave the cake in pan for 30 minutes, then transfer it to a cooling rack for further cooling. Won't that 30 minutes make the cake soggy? I usually place the cake tin on a wet towel for 5 minutes and transfer to wire rack immediately to cool down completely.

Just a confusion as I'm totally new to baking.

Surya : when the cake is cool it's easy to transfer/ remove from pan.And further on the wire rack..so that when you cut the cake, it doesn;t crumble. you can follow your method. good luck with baking.

I did it. It's was delicious and loved it. Thank you for this recipe and thank you for answering. I transferred to wire rack after 5 mins and sliced only after its completely cooled down.

I tried the tea time cake. It turned out ok except that the bottom and the sides got slightly burnt. Is the problem with the kind of baking dish I'm using. It's the shiny non stick one. What kind of baking dish is bestfor cakes?

Divs : This is a very simple cake to make. I have used non stick and had no problems. Could be the heating/temperature of the oven. Also best to place in the middle rack, when baking. you could line the baking pan with a butter paper/parchment paper.

I tried the cake but it was a disaster from the start. Tried to salvage it and the taste was superb so I want to try it one more time- before that I have a few qestions-
1. I misunderstood and used the blender of the mixie 2. I have a convection oven and do not have 175C but kept it at 180C for 10mins and 170C for the rest of the time 3.. why does it require a whisk at the end - mine did not get the airbubbles inspite of whisking for 5mins (only pain in the elbow!)4. the batter was not much and so I had to put it in a smaller baking pan.5. what did I do wrong as I want to attempt it once more- the taste was as if condensed milk was added-very good!! pl. reply

Anon : Sorry to hear the cake didn't turn out well as expected. This happens to be a very simple cake to make.To answer your quires .. If there is no 175 C in convection oven.. you should stick with lower celsius. As for in this recipe 170 C would be best. Never keen on higher. It may take a bit longer to bake, but still better than putting on higher and not getting a good bake.Then to answer the whisking is to incorporate some air into the batter. Blending in mixie make it easy, which otherwise can be done by hand. I have given a recipe measurement for a small cake. I hope my answers are of help to you. Happy baking :)

thankyou v. much for taking the time to reply(frankly, didn't expect one). I still did not understand why you used the whisk, besides incorporating air. Is it because a mixie was used? can a hand electric beater be used instead? the reason for asking about the whisk is because in almost all cake recipes dry ingred. are mixed and folded and rushed into the oven- so you really got me here. Anyway I like the taste of most of your recipes which has a simple and tasty touch and a feel of home cooking without the initial bla- bla fanfare (story telling).rgds
